Basmati has a fresh fragrance that makes it immediately recognizable at the table, with a texture that is fluffy, rather than sticky like most other long-grain rices. Rinse several times in cold water, and leave to soak for 30 minutes. Drain with a fine-mesh sieve. For a touch of flavor, sauté the rice in butter for 2 minutes in pot, then cook. Season with herbs and spices like saffron, cardamom and curry, for a flavorful side dish. Goes perfectly with chicken, pork, and most especially lamb.
